Old Tub Bourbon Whiskey – Bottled in Bond
Once in a while in our journey of adult beverage discovery, we need to step back and truly appreciate the work that is being done by some of the top bourbon makers to offer what I like to call “History in a bottle”. This is one of those whiskies.
Previously only available in the Jim Beam Stillhouse gift shop, Old Tub Bottled in Bond has been a favorite of mine for quite some time. I actually bought a pint bottle at the gift shop a few years back thinking I was going to keep it as a memento. It wasn’t very expensive and could easily stash in my checked bag. On that trip we found ourselves out of whiskey at one point on a long (chauffeured) drive from another distillery. So, we opened my Old Tub and were blown away by what was in the bottle.
“We’re taking bourbon lovers back in time and making a delicious bourbon true to the way my ancestors intended over 140 years ago, when Old Tub was first crafted,” said Fred Noe, seventh generation master distiller in a press release. “I’m excited to share this one-of-a-kind liquid with our fans and provide a bit of authenticity and nostalgia as we head towards another 225 years in the bourbon industry.”
Non-Chill Filter is a process, or lack of a process actually, that maintains all of the oils and esters in a whiskey before it goes to bottling. By chilling down the whiskey before it goes to bottling you are able to remove those oils as they turn solid, but in doing so, you are also removing a degree of character. The process was implemented as a quality control measure as when a non-chill filter whiskey gets cold, it gets cloudy.

Shake again without ice (dry shake) and then strain into a coupe glass (up) or a double old-fashioned glass with a large cube (on the rock). Garnish with a skewered lemon peel and Luxardo cherry. Top with a couple of dashes of bitters.
