With today’s entry into the 2023 Spirited Holiday Countdown Calendar, we exlpore an Irish Whiskey that had been absent from our shelves for about two years. Call it a COVID casualty due to high demand and a flavor profile that drew many to seek out this bottle.
Matured in ex-Bourbon barrels and Oloroso Sherry casks and then finished for 12-22 months in Pedro Ximenez hogshead barrels (very large barrel typical for sherry aging. about 145 gallons), this whiskey offers a profound flavor profile that I am sure you will enjoy. When it returned to our shelves, just a few short weeks agom there was no doubt that it was going to make this year’s calendar. Enjoy!

Tom’s Tasting Notes: When this hit our shelves a few years back, I couldn’t wait to try it. I am a big fan of PX Sherry, and had never tried something of this style before. When revisiting this whiskey for the calendar, it brought back a flood of memories. Sweet vanilla on the nose, very reminiscent of vanilla frosting. Giving way to aromoas of raisins and mulled wine (this comes from the PX barrel). The flavor is intense. Stewed fruit, raisins and a hint of oakyness with a sweet and soft finish. After finishing the glass, go back and smell the empty vessel. The lingering aromas evolve into something magical. With dusty wood, raisins and honey. The last sniff is really quite remarkable and memorable.
